Breakfast Casserole

 

For breakfast, brunch or anytime you’re hungry!

 

1 1/2 dozen large eggs

1 bag shredded hashbrowns

1 package bacon

2 cups grated cheese

2 cups sliced mushrooms (optional)

1 t. salt

1 t. pepper

1 t.garlic

1/4 cup Holy Molé! Salsa

 

Cook hashbrowns with oil (add a little bacon grease for taste).  Fry 1 pkg. bacon and crumble into bite size bacon bits.  Whip 1 1/2 dozen large eggs in bowl and add salt, pepper, garlic salt, and your favorite Holy Mole'! Salsa.

 

In rectangular glass dish, layer cooked hashbrowns and  sliced mushrooms.  Pour in the Holy Molé! egg mixture, sprinkle crumbled bacon, and finally top with cheese.

 

Bake at 350 degrees for 30-45 minutes (ovens vary).  Serve hot with tortillas and Holy Molé! Salsa on the side.
