Meat Loaf

Holy Molé! makes even Meat Loaf special!

2 eggs
¾ c milk
½ c fine dry bread crumbs
¼ finely chopped onion or 1 tsp onion powder
2 T. snipped parsley
1 t. salt
Pinch pepper (to taste)
½ tsp ground sage
1½ Lbs lean ground beef
½ c catsup
2 T. brown sugar
1 t. dry mustard
2 T. Holy Molé! Grilled Habanero Salsa

Preheat oven to 350 degrees. Combine eggs & milk. Stir in bread crumbs, onion, parsley, salt and pepper. Add beef and mix well. Pat mixture into 8 x 4 x 2 loaf pan. Bake 1-¼ hours at 350 degrees. Spoon off fat. Combine catsup, brown sugar, dry mustard and Holy Molé! salsa. Spread over meat. Return to oven for 10 minutes.
